Single-column distillation at Traveller’s Liquors in Belize, a country located south of Mexico and east of Guatemala. The rum is aged for 4 to 6 years in Bourbon barrels.

- 1 2/3 oz FAIR® Rum XO
- 2/3 oz fresh lime juice
- 1/3 oz sugar syrup
- 2 dashes of Angostura bitters, shake all 4 ingredients
- Pour over ice cube in a highball
- Top up with ginger beer and garnish with a lime wedge
